A berry delicious addition to your yogurt bowl or just a quick snack. Oats and sliced almonds coated in a blueberry-spiced, maple syrup then toasted to crunchy perfection. So good!
INGREDIENTS – makes 4-5c
2 1/2c rolled oats
1c almonds, sliced
1c frozen blueberries
1/3c maple syrup
1/4c oil
3/4t cinnamon
1/4t nutmeg
1/8t cardamom
1/8t salt
1/2t vanilla
INSTRUCTIONS
Preheat oven to 325°F.
Add oats and almonds to a large bowl.
In a small pot, stir together blueberries, maple, oil, cinnamon, nutmeg, cardamom, salt and vanilla. Bring to a boil and reduce to a simmer for 5 minutes. Using a fork or potato masher, give the blueberries a little mash to make sure they burst open but don’t obliterate them. Simmer for another minute then pour over oats and almonds.
Stir to coat then dump onto a large parchment lined baking sheet. Spread out as much and as evenly as possible. Bake for 15 minutes, stir, bake for another 15 minutes. Allow to cool then store in an airtight container in the fridge.
