A fun and fresh spring take on a traditional tricolore salad. Sweet, juicy strawberries, crumbled gorgonzola and toasty sunflower seeds over arugula, endive and radicchio with a strawberry balsamic vinaigrette. Perfectly balanced and delicious.
INGREDIENTS – serves 2-4
1/4-1/2 radicchio, core removed and chopped thin
1 endive, core removed and chopped thin
1-2c arugula
2T balsamic vinegar
1T strawberry jam
2T olive oil
4 strawberries, sliced
2-3T gorgonzola, crumbled
2T sunflower seeds, toasted
INSTRUCTIONS
Place radicchio, endive and arugula to a large bowl.
In a small bowl or jar with a lid, add balsamic, jam, olive oil and a pinch of salt and pepper. Whisk to combine (or tighten the lid and shake). Pour about 3/4 of the dressing over the lettuces. Toss to coat.
Top with strawberries, gorgonzola and sunflower seeds then finish with another drizzle of dressing.
