HERBY MINI POPOVERS

The perfect side for the start of spring. Fluffy, buttery mini popovers loaded with fresh dill and chives. So deliciously herby.

INGREDIENTS makes 12

1/2c milk
1 egg
1/4t salt
1/2c flour
4T butter, 1T melted/3T cold
1/4c fresh dill, chopped
1/4c fresh chives, chopped
(feel free to substitute whatever herbs you prefer)

INSTRUCTIONS

Preheat oven to 425°F.

Blend together milk, egg, salt, flour and 1T melted butter until combined. Add the herbs and pulse a couple of times to stir them in. Set aside to rest for a minute while you prep the mini muffin pan.

Cut the remaining 3T butter into 12 relatively equal pieces and place each in its own mini muffin cup in the pan. Put the pan in the oven and let it the butter melt and the pan get hot for about 4-6 minutes.

Pour the batter into the melted butter in each cup, filling almost to the top. (Be careful the pan is hot). Bake for 15 minutes.
