So fresh and full of spring flavor. Spiced, tender, roasted carrots over a smear of greek yogurt, finished with a fresh lemon dill dressing. Absolutely delicious!
INGREDIENTS – serves 2-4
2 large carrots, cut into roughly 1″ chunks
1 lemon, zested (save juice for dressing)
1/4t salt
1/4t black pepper
1/2t coriander
1/2t aleppo pepper
2T olive oil
1/2 lemon, juice
1T fresh dill, chopped
1T white balsamic vinegar
2T olive oil
1/3-1/2c greek yogurt
INSTRUCTIONS
Preheat oven to 425°F.
Place carrots in a large bowl, add lemon zest, salt, black pepper, coriander, aleppo pepper and 2T olive oil. Toss to coat then spread out on a baking sheet and roast for 20 minutes.
While you wait, whisk together lemon juice, dill, balsamic and olive oil with a pinch of salt and pepper. Set aside.
Smear yogurt on a plate, top with carrots then spoon dressing over the top.
