You’re gonna want to try this one! Tender gnocchi coated in a super easy, super luscious caramelized leek parmesan sauce then finished with a sprinkle of crunchy bacon breadcrumb. To die for!
INGREDIENTS – serves 2
3 slices bacon
1 slice bread, thoroughly toasted
1 leek, light green and white parts, well rinsed, thin sliced
1T butter
1/4t thyme
1 pkg gnocchi
1/2-3/4c pasta water
1/2c parmesan, grated
INSTRUCTIONS
Bring a large pot of salted water to boil and cook gnocchi per package instructions, reserving about 3/4c pasta water before straining.
Bring a large skillet to medium heat. Cook the bacon until crispy then set aside on a towel-lined plate to cool.
Break the bacon and toast up in a small food processor and chop until it turns into a crumb.
Pour out any grease, leaving about a tablespoon left then return to the heat and reduce to med-low. Saute leek with a pinch of salt for 8-10 minutes, stirring occasionally. Turn off the heat then add gnocchi, 1/2c pasta water and parmesan. Stir to combine and melt the cheese into the sauce then plate (if you want it saucier then stir in more pasta water). Finish with a sprinkling of bacon breadcrumbs.
