Snickerdoodle cookies with a delicious kick! Classic buttery cookies flavored with lots of vanilla and coated in a chai spiced sugar mix. Such a flavorful treat!
INGREDIENTS – makes about 30-40
1c butter, room temp
1 1/2c sugar (plus more for rolling)
2 eggs, room temp
1T vanilla
2 1/4c flour
2t cream of tartar
1t baking powder
1/4t salt
1T cinnamon
1t cardamom
1t ginger
1/4t allspice
1/4t clove
1/4t nutmeg
1/8t black pepper, finely ground
3T sugar
INSTRUCTIONS
Beat butter and sugar together until light pale yellow and creamy, about 10 minutes. Add vanilla and eggs, continue to beat until smooth and fluffy.
Sift together the flour, cream of tartar, baking powder and salt, then pour into the butter mixture and stir until combined.
In a small bowl, stir together cinnamon, cardamom, ginger, allspice, clove, nutmeg, black pepper and 3T sugar. Scoop cookie dough into about 1″ balls, roll between your palms to smooth then roll in the spiced sugar until fully coated. Place on a large plate and refrigerate for 1-2 hours (or freeze for 20 minutes).
Preheat oven to 400°F.
Place the chilled dough balls on a parchment lined baking sheet 4-5″ apart. Bake for 8-10 minutes. Returning the remaining dough to the fridge between batches.
