A crispy, fresh way to help brighten up these cold winter days. Crunchy endive tossed with arugula in a light vinaigrette then finished with thin sliced apples, toasted almonds and crumbled gorgonzola. Clean and delicious.
INGREDIENTS – serves 2-4
2T white balsamic vinegar
1t maple syrup
3T olive oil
2-3c arugula
2 endive, core removed and sliced thin
1 small apple, core removed and sliced thin
3T sliced almonds, toasted
1/4c gorgonzola, crumbled
INSTRUCTIONS
In a mason jar with a lid or in a small bowl with a whisk, combine vinegar, maple and olive oil with a pinch of salt and pepper.
Add arugula and endive to a large bowl then pour about 2/3 of the dressing over and toss to coat.
Top with apple slices, almonds and gorgonzola then finish with a drizzle of the remaining dressing.
