A perfect combination of sweet, salty and tangy all in one delicious and healthy salad! Fresh greens tossed in a quick and easy white balsamic dressing topped with sliced pears, juicy pomegranate seeds, thin ribbons of red onion and crumbled feta. Incredibly refreshing and so flavorful.
INGREDIENTS – serves 2-4
2T white balsamic vinegar
1t maple syrup
3T olive oil
4-6c fresh greens
1/2 pear, sliced thin
1/4c pomegranate seeds
2-3 thin slices red onion
2-3T feta, crumbled
INSTRUCTIONS
In a mason jar with a lid or in a small bowl with a whisk, combine vinegar, maple and olive oil with a pinch of salt and pepper.
Add greens to a large bowl then pour about 2/3 of the dressing over and toss to coat.
Top with pear slices, pomegranate seeds, red onion and feta then finish with a drizzle of the remaining dressing.
