My new favorite Christmas cookie! Super chocolatey, almost fudgey, brownie inspired cookies topped with a square of peppermint bark. Freaking amazing. Santa would agree!
INGREDIENTS – makes about 40
1c butter, room temp
1 1/2c sugar
3 eggs, room temp
1t vanilla
1 1/2c flour
3/4c cocoa powder
1t baking soda
1/4t salt
40 Ghirardelli Peppermint Bark squares
INSTRUCTIONS
Preheat oven to 375°F.
Beat butter and sugar together until light pale yellow and creamy, about 10 minutes. Add vanilla and eggs, continue to beat until smooth and fluffy.
Sift together the flour, cocoa, baking soda and salt, then pour into the butter mixture and stir until combined. Scoop into about 1″ balls onto a parchment lined baking sheet about 3-4″ apart. Bake for 6 minutes, pull out of the oven and immediately place a peppermint bark square in the center of each cookie then return to the oven for another 2 minutes.
(If you run out of peppermint bark, just sprinkle the cookie dough with a little sea salt and bake for 8 minutes.)
