CRANBERRY WALNUT MONKEY BREAD with CREAM CHEESE ICING

You’re gonna love this one! A quick biscuit dough cut into squares, dipped in butter, coated in cinnamon sugar then layered with dried cranberries and toasted walnuts in a loaf pan, baked until fluffy and sticky sweet with just a little crunch. Then as if you couldn’t get any better, drizzled with an easy cream cheese icing. Pure decadence and super fun for the holidays!

INGREDIENTS makes 4-6

2c flour
1T baking powder
1/2t salt
1/4c butter (plus more for dipping)
3/4c milk (plus more for icing)
1t vanilla extract

1/3c dried cranberries
1/2c walnuts, toasted and finely chopped

1/4c butter, melted
1/2c suger
1T+1t cinnamon (4t)
1/4t nutmeg

1oz cream cheese
1/2c powdered sugar
1/4c milk

INSTRUCTIONS

Preheat oven to 375°F.

In a large bowl, whisk together flour, baking powder and salt. Cut in the butter with a fork (or clean hands) until the butter is small and pea sized. Pour in 3/4c milk and vanilla and stir to combine, work into a ball then dump onto a floured surface. Roll out to about 1/2″ then cut into roughly 1″ squares. This does not have to look perfect.

Sprinkle about 1/3 of the cranberries and walnuts in the bottom of a well greased, parchment lined loaf pan.

Set up two small bowls, pour melted butter in one and stir together sugar, cinnamon and nutmeg in the other.

One by one, dip the dough squares in butter (letting excess drip off) then coat in the cinnamon sugar mixture and place on top of the cranberries and walnuts. Continue with first half of the dough squares.

Sprinkle the next 1/3 of the cranberries and walnuts then repeat with the second half of the dough square and top with the remaining cranberries and walnuts. If theres any cinnamon sugar or butter leftover, pour it over the top then bake for 45 minutes.

While it cools, stir (mash) together cream cheese and powdered sugar until it forms a paste then whisk in 1/4c milk until smooth.

Place your serving dish top side down on the loaf pan, hold them together with baking mitts then flip over, allowing the monkey bread to plop out on to the serving dish. Drizzle with icing.
