Think sausage and pepper sandwich but make it a calzone! (Even better!) Italian sausage crisped up with a little onion then wrapped in pizza dough with fresh green bell pepper and lots of garlicky, gooey cheese. Perfect little pockets of delicious goodness.
INGREDIENTS
1 pizza dough, room temp, either from the supermarket deli or give my recipe a try
1/4-1/2lb Italian sausage
1/4 onion, chopped
8oz ricotta
1/2c fontina or mozzarella cheese, shredded
1/4c parmesan or provolone, grated
1/4t oregano
1/4t garlic powder
1/2 green bell pepper, roughly chopped
Tomato sauce for dipping
INSTRUCTIONS
Preheat oven to 500°F with your pizza stone inside.
Divide the dough in 2, form each into balls, cover with a tea towel and let sit for at least 10 minutes.
Saute sausage and onion in a skillet on medium heat until the sausage is cooked through and the onions are browned. Remove to a paper towel lined bowl and set aside.
Place a piece of parchment on your pizza peel. Stretch out each dough into a roughly 8-10″ circle.
In a medium bowl, stir together ricotta, fontina, parm, oregano and garlic powder. Scoop half onto each dough circle and spread each out over half of the circle, leaving about an inch around the edge. Top with sausage and green bell pepper then fold the empty side of the dough over the top and pinch the edges together to seal. Give the tops a little slit so they won’t explode then slide them into the oven and bake for about 10 minutes, until golden brown.
