WITCHES FINGERS COOKIES

Fun, delicious and a little spooky! Buttery sugar cookies with raspberry jam and sliced almonds but also dyed green with fresh spinach and shaped like creepy witch fingers. A joy to make and eat. These cookies are a must for this year’s halloween party!

INGREDIENTS makes 24-30

1c butter (2 sticks), softened
1c powdered suger
1 egg
1c fresh spinach
1t vanilla
2 3/4c flour
1t baking powder
1/2t salt

2T red jam (raspberry, strawberry, cherry anything red)
1/4c sliced almonds

INSTRUCTIONS

In a large mixing bowl, add butter then sift in powdered sugar and whip together until smooth.

Using an immersion blender and tall cup (or small blender), blend the egg and spinach together completely. Pour into your mixing bowl and combine until all the liquid is absorbed into the butter mixture.

Sift in flour, baking powder and salt then carefully incorporate until all of the dry ingredients are just combined. Bring it into a ball, cover and refrigerate for at least 30 minutes.

Preheat oven to 325°F.

Scoop about a tablespoon of dough into clean hands, roll into a 3-4″ snake between your palms then allow it to roll up between your fingers to give it some ridges (knuckles). Set on a parchment lined baking sheet about an inch apart.

Using a knife, press some wrinkles into the knuckle ridges. Press your finger tip into one end to create a nail bed, spoon about 1/8t jam into the middle of the nail bed then place a slice of almond into the jam to give it a nail.

Bake 18-20 minutes.
