Making salami croutons a thing with this fabulously flavorful salad! Fresh romaine tossed in a tangy asiago dressing and topped with roasted bell pepper, capers and lightly fried salami cubes. Delicious and so fun!
INGREDIENTS – serves 2
4oz salami, cubed (the log type)
1/4c asiago cheese, grated
1t dijon mustard
1 small garlic clove, grated
2T red wine vinegar
3T olive oil
6c romaine, chopped
1/4c roasted red bell pepper, sliced
2T capers
Extra asiago, grated
INSTRUCTIONS
Bring a frying pan up to medium-med-high heat. Add a drizzle of olive oil then fry the salami cubes until crispy, stirring occasionally to make sure they brown on all sides. Remove to a paper towel lined plate/bowl and set aside.
In a small bowl, whisk together asiago, dijon, garlic, red wine vinegar and olive oil with a pinch of salt and pepper.
Toss the romaine in a large bowl with about half of the dressing. Top with roasted bell pepper, capers, fried salami and some more asiago, then finish with the remaining dressing.
