APPLE BRIE CHICKEN

Fabulously delicious, easy and perfect for Fall. Herby mustard coated chicken breast with apple and brie roasted over the top. Give it a try!

INGREDIENTS – serves 2

1 chicken breast, butterflied in half

2T olive oil
1/8t salt
1/8t pepper
1/4t garlic powder
1/8t onion powder
1/8t dried thyme
1/8t dried rosemary
1/4t dried sage
1T stoneground mustard

1/2 apple, thin sliced
2-3oz brie, thin sliced

INSTRUCTIONS

Preheat oven 375°F.

Place chicken on a foil lined baking sheet. (Make sure to use a baking sheet that has a little lip around the edge so any extra juice doesn’t drip into your oven).

In a small bowl, mix together olive oil, salt, pepper, garlic powder, onion powder, thyme, rosemary, sage and mustard. Brush both sides of the chicken with the olive oil mixture, then shingle the apple and brie slices in an alternating pattern on top. Roast for 18 minutes then switch to broil for 2 more minutes.
