APPLE + BOURSIN SALAD

Let’s dive into some Fall flavors with this fabulous and easy to make salad! Thin sliced apple, toasted walnuts and little balls of Boursin cheese over fresh greens tossed in a delicious honey mustard thyme dressing. So so good!

INGREDIENTS – serves 2

1/2t dijon mustard
1/2t honey
2T lemon juice
1/2t fresh thyme (or 1/4t dried)
2T olive oil

3-4T Boursin cheese, whichever flavor you like most

4-6c fresh greens
1 apple, sliced thin
1/4c walnuts, toasted and chopped

INSTRUCTIONS

In a small bowl, whisk together dijon, honey, lemon juice, thyme and olive oil with a pinch of salt and pepper.

Make 10-12 roughly 1/2t balls of Boursin by rolling a small scoop between your palms. Set aside.

Place greens in a large bowl. Top with apple slices, walnuts and the Boursin balls. Finish by drizzling with dressing and giving it a light toss.
