BUFFALO CELERIAC FRIES

Its time to change up your favorite game day snack! Delicious baked celery root fries topped with shredded buffalo chicken and melted blue cheese. So good you just can’t stop!

INGREDIENTS – serves 2

1 large celeriac, cut into 1/2″ fries
1/4t salt
1/4t celery seeds
1/4t garlic powder
1/8t black pepper
2T olive oil

1/2c shredded chicken (season chicken breast-375°F-30 minutes)
1/3c buffalo sauce
1/3c blue cheese

Chives, chopped

INSTRUCTIONS

Preheat oven to 425°F.

Dump celeriac on a large parchment lined baking sheet. Sprinkle with salt, celery seeds, garlic powder and black pepper. Drizzle with olive oil then toss to coat. Spread the fries out so each has its own space then roast for 25-30 minutes.

While the fries cook, add chicken and buffalo sauce to a small bowl and stir until the chicken is completely covered in sauce.

When the fries are done, pull them out of the oven then push them into a small pile in the middle of the baking sheet (or transfer to a smaller baking sheet so it serves up neater). Distribute the chicken over the top then sprinkle with blue cheese. Return to the oven for 3-5 minutes until the cheese melts a little bit.

Finish with some chopped chives then serve.
