Piccata inspired meatballs with perfectly tender broccolini baked all in one dish. Lemony, tangy and freaking delicious.
INGREDIENTS – serves 2-3
1 egg
1/4t salt
1/4t black pepper
1 lemon, zested (save the juice for later)
2-3 garlic cloves, grated or finely minced
1/2c bread crumbs
1/4c parmesan, grated – plus more for topping
1/2lb ground chicken/turkey (or any ground meat)
1 bundle broccolini, trimmed
2 lemons, juiced
2T capers, drained
INSTRUCTIONS
Preheat oven to 375°F.
In a large bowl, lightly mix egg, 1/4t salt, black pepper, rosemary, garlic, bread crumbs and parmesan then add ground meat and incorporate. Scoop and roll into 12-16 balls and place, evenly spaced, in a greased 9×13 baking dish. Roast 15 minutes.
While its in the oven, toss broccolini in a pinch of salt and pepper with a drizzle of olive oil. Set aside.
Pull the baking dish from the oven then distribute the broccolini in between the meatballs. Pour lemon juice and capers over the top then roast for another 20 minutes.
