A quick and delicious way to switch up your standard side salad. Lots of fresh greens, creamy avocado and some crunchy seeds, finished with a drizzle of chive vinaigrette. Healthy, simple and flavorful.
INGREDIENTS – serves 2-4
4-6c fresh greens
1/2 avocado cubed
2T pepitas
2t sesame seeds
1T sunflower seeds
2T chives, chopped
2T red wine vinegar
1t maple syrup/honey
3T olive oil
INSTRUCTIONS
Assemble the greens in a med-large bowl, top with avocado and sprinkle with seeds.
In a small bowl or jar with a lid, Add chives, vinegar, maple, olive oil and a pinch of salt and pepper. Whisk to combine (or tighten the lid and shake). Drizzle over the salad and give it a little toss.
