GRILLED CORN + TOMATO SALAD with GORGONZOLA

The perfect salad to savor the last few days of summer. Fresh, juicy tomatoes, slightly charred, sweet corn and crumbly gorgonzola tossed in a lemony shallot dressing and sprinkled with some chopped chives. Bright and so flavorful. You’ve gotta try it!

INGREDIENTS – serves 2-4

1 small shallot, finely diced
1/2t honey
1/2 lemon, juiced
2T red wine vinegar
3T olive oil

2 corn cobs, grilled and cut off the cob
1 1/2c tomatoes, chopped
1/4c gorgonzola, crumbled

1T chives, chopped

INSTRUCTIONS

In a large bowl, whisk together shallot, honey, lemon juice, vinegar and olive oil with a pinch of salt and pepper. Add tomatoes, corn and gorgonzola, toss to coat then finish with chives.
