WILD BLUEBERRY MUFFINS

Summer blueberries shine in these delicious and easy to make muffins. Simple muffins loaded with blueberries and a little cinnamon nutmeg swirl. So good. They disappear so fast!

INGREDIENTS makes 6-8 regular/18-24 minis

1 3/4c flour
2 1/2t baking powder
1/4t salt
1/4c sugar
1c milk
2 eggs
1t vanilla extract
2T melted butter
1c blueberries, fresh or frozen

2T brown sugar
3/4t cinnamon
2T flour
2T melted butter

INSTRUCTIONS

Preheat oven to 425°F.

In a large bowl, whisk together flour, baking powder, salt and sugar. Pour in milk, eggs and vanilla. Stir to combine then pour in 2T melted butter and mix it in. Switch to a rubber spatula and fold in the blueberries then scoop into a well greased muffin tin.

In a small bowl, stir together the remaining ingredients with a fork then spoon a little bit in the middle of each muffin. Give it a little swirl with a toothpick.

Place the muffin tin in the oven, reduce the temp to 375°F and bake 25-28 minutes for regular sized muffins and 18-20 for minis.
