Peach season is short and sweet in Southern Oregon and this salad is the perfect way to celebrate. Fresh, juicy peaches, crunchy toasty pistachios and a sprinkle of chives on top of summer greens dressed in a light vinaigrette served on a spear of creamy whipped ricotta. An incredible summer salad full of flavor and freshness.
INGREDIENTS – serves 2
1/2-3/4c ricotta, whipped in a food processor until smooth
4-5c lettuce greens
2T red wine vinegar or white
1/2t honey
1/4t dijon
2T olive oil
1 peach, sliced
1/4c pistachios, toasted and chopped
1-2T fresh chives, chopped
INSTRUCTIONS
Prep 2 plates, dollop half of the ricotta on each plate then give it a little smear over the plate.
Place greens in a large bowl. In a small bowl or cup, whisk vinegar, honey, dijon and olive oil together with a pinch of salt and pepper. Pour over greens and toss to coat. Distribute the greens over the smeared ricotta.
Arrange the peach slices over the greens then sprinkle with pistachios and chives.
