CROCKPOT GREEN CHILI CHICKEN + PINTOS

Getting a little too hot to start up the oven? This easy and delicious crockpot recipe will be a new favorite! Incredibly tender chicken breast simmered in lots of green chilis, lime juice, garlic, onion and cumin then shredded up and finished with some creamy pinto beans. A whole lot of flavor with a touch of spice and minimal effort. So good!

INGREDIENTS – serves 2-3

2-4oz cans diced green chilis (mild, hot or one of both)
1 lime, juiced
1 chicken breast

1/2t salt
1/4t black pepper
1/2t garlic powder
1/4t onion powder
1/4t cumin

1-15oz can pinto beans, drained and rinsed
1/4c water

INSTRUCTIONS

In a crockpot, stir together the green chilis and lime juice. Set the chicken breast on top then sprinkle seasonings over the top. Stir to coat, making sure both sides of the chicken is covered in spices and chilis. Top with the lid and cook on high for 5-6 hours.

Shred the chicken with a couple of forks then dump in the pinto beans and water. Give it a little stir then cover and cook again for another hour or 2.

Give it one last stir before serving in tacos or over rice
