A delicious and fun appetizer for spring! Juicy strawberries, crisp cucumber and slivers of shaved fennel tossed in a quick lemon and aleppo pepper dressing served over creamy whipped feta and finished with lots of fresh chives and dill. Super fresh and full of flavor, you’re gonna love it!
INGREDIENTS – serves 4-6
1/2 lemon, juiced
1/8t salt
1/8t aleppo pepper
1/2t honey
1T olive oil
1/2c strawberries, small cubes
1/2c cucumber, small cubes
1/4c fennel, shaved (sub shallot or red onion)
1/2c greek yogurt
4oz feta, cubed or crumbled
1-2T fresh chives, chopped
1-2T fresh dill, chopped
INSTRUCTIONS
In a medium bowl, whisk together lemon juice, salt aleppo and honey together until the salt and honey has dissolved then whisk in the olive oil until smooth. Add strawberries, cucumber and fennel to the dressing and toss to coat then set aside.
In a small food processor (or an immersion blender with a tall cup), blend the greek yogurt and feta until smooth. Pour in the serving bowl then spoon the strawberry salad on top and finish with a hearty sprinkling of fresh herbs.
