This light and citrusy dessert is the perfect finish to any spring meal. Sweet, orange soaked lady fingers layered with a whipped, cardamom-scented mascarpone. Delicate and oh so delicious.
INGREDIENTS serves 4
2T sugar
1 1/2 oranges, juiced
1/3c cream, whipped to soft peaks
4oz mascarpone cheese
1T powdered sugar
1/4t cardamom
14-20 lady fingers
INSTRUCTIONS
In a shallow dish (that the lady fingers will fit in), dissolve sugar in orange juice. Set aside.
In a medium bowl, stir together mascarpone, powdered sugar and cardamom with a tiny pinch of salt until smooth. Fold in about 1/3 of the whipped cream at a time until combined.
Dunk lady fingers in the orange juice mixture for 1-2 sec per side, one at a time until you fill the bottom of a 5×5/6×6 dish. Spread half of the mascarpone mixture over the to cover then repeat for a second layer.
