ROSEMARY GARLIC MEATBALLS with RED WINE MARINARA

The quick and easy weeknight you have all been waiting for! Classic turkey meatballs with lots of fresh rosemary and garlic, roasted in a red wine balsamic tomato sauce. Everything roasted up in one pan. Simple, yet so flavorful.

INGREDIENTS – serves 2-3

1/2lb ground chicken/turkey (or any ground meat)
1 egg
1/4t salt
1/4t black pepper
2T fresh rosemary, chopped
2-3 garlic cloves, grated or finely minced
1/2c bread crumbs
1/4c parmesan, grated – plus more for topping

1 can tomato sauce (15 oz)
1/4c red wine
1/8t salt
1/4t red pepper flakes
2T balsamic vinegar

INSTRUCTIONS

Preheat oven to 375°F.

In a large bowl, lightly mix ground meat, egg, 1/4t salt, black pepper, rosemary, garlic, bread crumbs and parmesan. Scoop and roll into 12-16 balls and place, evenly spaced, in a greased 8×8 or 9×9 baking dish. Roast 15 minutes.

In a medium bowl, stir together tomato sauce, red wine, 1/8t salt, red pepper flakes and balsamic. Pour over the meatballs, making sure they all get covered. Bake for another 20-25 minutes.

Serve over polenta, pasta, in a bun, however you’d like.
