CACIO E PEPE MINI POPOVERS

Crisp, fluffy mini popovers loaded with grated parmesan and cracked black pepper. Whipped up in a blender, couldn’t be easier. So buttery, so delicious. These disappear so fast!

INGREDIENTS makes 12

1/2c milk
1 egg
1/4t salt
1/2c flour
1/3c parmesan, grated
1t black pepper
4T butter, 1T melted/3T cold

INSTRUCTIONS

Preheat oven to 425°F.

Blend together milk, egg, salt, flour, parmesan and black pepper until combined. Pour in 1T melted butter and blend incorporated. Set aside to rest for a minute while you prep the mini muffin pan.

Cut the remaining 3T butter into 12 relatively equal pieces and place each in its own muffin cup in the pan. Put the pan in the oven and let it the butter melt and the pan get hot for about 6 minutes.

Pour the batter into the melted butter in each cup, filling almost to the top. Bake for 15 minutes.
