SPICY CABBAGE NOODLES

Lots of healthy veg and loaded with flavor, this super easy weeknight dinner is about to be your new fav! Shredded carrot and green onion sautéed with lots of cabbage then tossed in a spicy sesame soy sauce with noodles and roasted peanuts. So good!

INGREDIENTS – serves 2-3

2 servings udon noodles

1/4c soy sauce
2T rice wine vinegar
2t maple syrup or honey
3T sesame oil
1/4t red pepper flakes or more

2T olive oil
1 large carrot, shredded
3 green onions, white and light greens, sliced
2-3c green or napa cabbage, finely sliced/shredded

1/3c roasted peanuts, chopped plus more for topping

INSTRUCTIONS

Bring a pot of water to boil, cook noodles to package instructions, drain and set aside.

While the noodles cook, stir together soy sauce, rice wine vinegar, maple, sesame oil and pepper flakes. Have this ready before starting the veg.

Bring a large skillet to medium-med-high heat. Saute the white and light green parts of the green onion with the carrot for about a minute in olive oil then stir in the cabbage and let it all cook for another 1-2 minutes until everything starts to soften. 

Pour in the sauce, stir to get everything coated then turn the heat off. Add the noodles and give it a good toss. (I like to use tongs at this point). Sprinkle the remaining dark green parts of the green onion and peanuts and toss until they’re incorporated. 

Plate it up and finish with more peanuts.
