The perfect healthy lunch or easy and fast dinner. You’re going to love this velvety smooth cheesy cauliflower soup. Shallot, garlic and thyme simmered with cauliflower then pureed with white pepper and nutmeg and finished with hearty sprinkling of white cheddar cheese. Creamy, luscious and freaking delicious!
INGREDIENTS – serves 4-6
2T butter or olive oil
1 shallot (or 1/2 onion), chopped
2 garlic cloves, smashed
1/2t salt
1/2t thyme
1 cauliflower, cut into florets
4c broth, chicken or veg
1/2t white pepper
Pinch nutmeg
2c milk
1c white cheddar, shredded
Toppings: extra cheddar, chives
INSTRUCTIONS
Bring a large pot or small dutch oven to medium-med-high heat. Saute shallot and garlic in butter with salt and thyme until it starts to get some color. Dump in the cauliflower, give it a little stir then pour in broth. Bring to a boil, reduce to a simmer, cover with a lid and let cook for about 20 minutes.
Blend until smooth (I like an immersion blender for this). Stir in white pepper and nutmeg then milk. Bring to a simmer then turn off the heat. Sprinkle about half of the cheese in the soup, stir until its completely combined, then repeat with the rest of the cheese.
Top with some extra cheese and some fresh chives.
