Spiced up and so delicious, this high protein dinner is an all time favorite. Perfectly cooked chicken thighs coated in lots of spices, cooled down with a cucumber, dill, greek yogurt sauce. Such a tasty combination of flavors, you just can’t stop eating it!
INGREDIENTS
4-5 chicken thighs, boneless, skinless
1t turmeric
1/2t salt
1/2t black pepper
1/2t coriander
1/2t garlic powder
1/2t cumin
1/4t allspice
1/4t cardamom
1/4t red pepper flakes
3-4T olive oil
1/2 cucumber, shredded
1c greek yogurt
1/2 lemon, juiced
1/8t salt
1/8t garlic powder
2T fresh dill, chopped
INSTRUCTIONS
Preheat oven to 375°F.
Place chicken in a large bowl. Combine turmeric, salt, black pepper, coriander, garlic powder, cumin, allspice, cardamom and red pepper flakes, then sprinkle over chicken and toss to coat. Drizzle with olive oil and toss again. Place the thighs on a foil lined baking sheet, tucking the little bits in. Roast 25-30 minutes, until cooked through.
While it roasts, make the tzatziki. Place the shredded cucumber in the middle of a tea towel, wrap it up and squeeze as much liquid out as you can then add it to a medium bowl. Add yogurt, lemon juice, 1/8t salt, garlic powder and dill to the bowl and stir to combine.
I love serving this with orzo or rice. Makes for delicious leftovers too!
