You’re gonna love this healthy and delicious weeknight dinner. Tender, juicy chicken legs covered in herbes de provence and garlic, roasted alongside lots of mushrooms with a little balsamic. Comes together quick, will fill you house with an incredible aroma and the flavor is out of this world!
INGREDIENTS
4-5 chicken legs
1/4t salt
1/4t black pepper
1/4t garlic powder
1T herbes de provence
1 lb mushrooms, quartered (crimini, shiitake, button whatever you like)
3-4T olive oil
2T balsamic vinegar
INSTRUCTIONS
Preheat oven to 425°F.
Place chicken legs in a 9×13 baking dish. Combine salt, black pepper, garlic powder, and herbes de provence then sprinkle over chicken legs to coat then spread the legs out in the dish. Add the mushrooms in around the chicken then roast for 30 minutes.
Pour balsamic over the mushrooms then give it a little stir so that all the shrooms get some vinegar (keep in mind that baking dish is hot). Return to the oven for another 10-15 minutes, until the chicken is cooked through.
Serve by spooning the mushrooms and a little leftover sauce over the chicken. Great with pasta, rice, potatoes or even a salad.
