A seasonally delicious persimmon parfait to start the new year! Delicately sweet persimmon laced with cinnamon layered with maple yogurt and salty pistachios. An absolutely delicious high protein breakfast treat or afternoon snack. Easy and oh so tasty!
INGREDIENTS makes 2
2-3 fuyu persimmons, trimmed and cubed
1/8t cinnamon
1 1/2c greek yogurt
1-2T maple syrup
2-3T pistachios, roasted/salted, chopped
INSTRUCTIONS
In a small bowl, stir together yogurt and maple. In another bowl toss the persimmon in cinnamon until its coated.
In 2 glasses, spoon about 1/3 of the persimmons, 1/3 of the yogurt and a pinch of pistachios, continue to layer until its all used up then serve or refrigerate up to a couple of days just make sure you cover it.
