APPLE CINNAMON BAKED FRENCH TOAST

Cubed bread and apples soaked in a cinnamon, nutmeg and clove spiced custard, topped with buttery, brown sugar walnuts. Perfectly crisp with a tender interior, all you’ll need is a healthy pour of maple syrup to finish it off. Toss it together the night before then bake it off the next morning.  Easy, delicious and such a crowd pleaser.

INGREDIENTS serves 3-4

4-6c leftover cubed bread, enough to fill your 8×8 or equiv baking dish
1 apple, cubed

4 eggs
3/4c milk
1/2t vanilla
1/2t cinnamon
1/4t nutmeg
dash clove
1/8t salt

2T butter, melted
2T brown sugar
1/2c walnuts, toasted and chopped

INSTRUCTIONS

In a greased 8×8 (or equivalent) baking dish toss together the bread and apple cubes.

In a medium bowl, whisk together eggs, milk, vanilla, cinnamon, nutmeg, clove and salt. Pour over the bread and apples then gently stir the cubes to make sure everything got wet. Cover and refrigerate for 6 hrs-overnight. 

Pull the dish out of the fridge about 30 min – 1 hour before baking. Preheat oven to 400°F.

Give the bread and apples another gentle stir to make sure all the liquid get absorbed.

In a small bowl, stir together the butter, brown sugar and walnuts then distribute over the bread. Cover the top with foil, bake 20 minutes, remove the foil and bake another 20 minutes.
