BROCCOLI CHEDDAR TURKEY MAC

This cozy mash up is the ultimate one pot meal! Broccoli, carrots and onion sautéed with ground turkey, garlic and thyme then simmered with pasta and finished with a little cheese swirled in. So flavorful and cheesy with lots of protein and veggies packed in too! You’re gonna love it.

INGREDIENTS – serves 3-4

2T butter
1/2 onion, chopped or grated
1 carrot, grated
1 broccoli head and stalk, chopped and grated, respectively
1/2t salt (separated 1/4t / 1/4t)
1/2lb ground turkey
1/4t black pepper
1/4t thyme
1/4t garlic powder
1/4t onion powder

2c broth, warm
1c milk of choice, warm
1/2-16oz pkg ziti-style pasta

1/4c cream cheese
1/2c cheddar
1/4c parmesan

INSTRUCTIONS

In a large, deep skillet, saute onion, carrots and broccoli stalk in butter with 1/4t salt on med-high, cook until soft 4-5 minutes. Add turkey, remaining salt and seasonings. Break up the turkey and stir together. When the turkey is pretty much cooked, pour in broth and milk, stir to combine. Bring to a simmer then stir in the pasta and broccoli florets. Smush the pasta and broccoli down a bit so its all mostly submerged. Top with a lid and let simmer for about 5 minutes, give it a stir, replace the lid, simmer for another 5 minutes. Repeat 1 more time testing the pasta every few minutes until the pasta is cooked.

Turn off the heat stir in the cheese until smooth, salt to taste and serve.
