A gorgeous whole cauliflower, par-boiled then covered in a flavorful spiced butter and roasted until crisp on the outside and perfectly tender inside. Served over a greek yogurt-feta sauce with a sprinkling of pomegranate seeds. An absolute stunner on the table and even more delicious!
INGREDIENTS
1 cauliflower, stem trimmed
3T butter
1/2t salt
1/2t coriander
1/4t garlic powder
1/4t thyme
1t sage
Pinch cinnamon
Pinch allspice
1c greek yogurt
4oz feta
1/2 lemon, juiced
1/2t honey
Pomegranate seeds
INSTRUCTIONS
Preheat oven to 425°F.
Bring a large pot of salted water to boil. Boil the cauliflower for 8 minutes then place it on a baking sheet. Let it steam for a minute while you prepare the butter.
Melt butter in skillet on the stove or a bowl/cup in the microwave. While still hot, stir in the spices. Pour over the cauliflower trying to cover the whole thing with spiced butter. Use a pastry brush to sop up anything that dripped on the pan and make sure the cauliflower is covered in buttery goodness. Roast for 40-50 minutes.
While the cauliflower roasts, whip yogurt, feta, lemon juice and honey together in a small food processor until smooth. Spoon onto a plate then top with the roasted cauliflower and finish with some pomegranate seeds.
