GREEN CHICKEN CHILI

Theres nothing cozier than a big bowl of chili on a cold night and this green chicken chili is our new favorite! Green chilis, bell pepper, lots of garlic and cumin stewed together with shredded chicken and cannellini beans. So flavorful and warming, you’re gonna love it!

INGREDIENTS – serves 3-4

2T olive oil
1 chicken breast or 1-2c cooked chicken or turkey

1/2 onion, chopped
2 celery stalks, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
1/2t salt
2t cumin
1/2t garlic powder
1/2t onion powder

4c chicken broth
2 cans green chilis

1 can cannellni bean (white kidney beans)

1T cornstarch – optional

INSTRUCTIONS

Bring a large pot to medium heat. Sprinkle the chicken with salt and pepper then cook in olive oil for about 5-6 minutes on each side. Remove to a place and set aside.

Add a little more olive oil if needed then sauté the onion, celery and bell pepper with garlic, salt, cumin, garlic powder and onion powder. Cook stirring occasionally until soft, about 3-5 minutes. Pour in broth and green chilis, bring to a simmer then add the chicken and beans, stir and simmer for 10 minutes. Serve as is or if you want it a little thicker, scoop about 1/2c of the liquid into a measuring cup and whisk in cornstarch until smooth then stir it back into the chili. Let simmer for about a minute then serve.
