PECAN DATE BITES

A toasted pecan and a pretzel sandwiched together with a sticky date then covered in cinnamon white chocolate. Simple, salty-sweet bites with a touch of cozy holiday flavors.

INGREDIENTS – makes 18

18 pretzels, minis
9 dates, pitted and halved
18 pecans, toasted

1c white chocolate chips (or whatever chocolate you prefer, dark would be amazing)
1t coconut oil
1/8t cinnamon

INSTRUCTIONS

Line a small baking sheet (one that fits in your freezer) with parchment then distribute the pretzels over the parchment. Open the date halves up a bit and squish them cut side down on each pretzel then press a pecan on top of each date.

Using a microwave or double boiler, melt the chocolate chips with coconut oil, stirring occasionally until smooth. Remove from heat and swirl in the cinnamon. Spoon over each pecan-date-pretzel stacks then freeze for at least an hour. Store in a freezer bag/container.
