CINNAMON MAPLE DELICATA SQUASH

Melt in your mouth delicata squash roasted in cinnamon and maple syrup then topped with fresh chives and toasted pecans. Easy and so darn delicious!

INGREDIENTS

1 delicata squash, seeds removed, 1/4″ slices
2T butter, melted
1/2t cinnamon
1/4t salt

1/2c maple syrup

1/4c pecans, toasted and chopped
1-2T fresh chives, chopped

INSTRUCTIONS

Preheat oven to 425°F.

Toss the squash in melted butter, cinnamon and salt on a large parchment-lined baking sheet. Roast for 15 minutes. Pour maple over the squash pieces then return to the oven for 14-15 more minutes. Transfer to a serving dish, sprinkle with pecans and chives then serve.
