ORANGE GINGER CHICKEN + BROCCOLI

A quick and delicious favorite at our house! Sautéed chicken breast and broccoli florets finished in a super flavorful orange-ginger sauce with garlic and a touch of heat. You’re gonna love this one!

INGREDIENTS – serves 2

1 orange, zested and juiced
2T soy sauce
1T honey
2T fresh ginger, grated
1-2 garlic cloves, grated
Pinch red pepper flakes, to taste

3T oil, something neutral is best but use what you have
1 chicken breast, 1-2″ pieces
2-3c broccoli florets

INSTRUCTIONS

In a medium bowl or measuring cup, stir together orange zest and juice, soy sauce, honey, ginger, garlic and red pepper flakes. Set aside.

Bring a large skillet to medium-med-high heat and sprinkle the chicken pieces with a little salt. Sear the chicken on 2-3 sides in oil for about 2 minutes on each side, until they easily pull up from the pan and are nicely browned. Remove to a plate and set aside (its ok if they aren’t cooked through yet, they go back in the pan in a minute).

Toss the broccoli in the pan (add a little more oil if you need to), stir occasionally until it starts to darken a little and sweat, 2-3 minutes. Dump the chicken back in (along with any juices on the plate) then pour in the orange ginger sauce. Stir to coat while the sauce cooks down a bit. Once the sauce is nice and thick, serve over rice.
