MAPLE PECAN PUMPKIN SPICE CHIA PUDDING with WHITE CHOCOLATE SHELL

Pumpkin puree and spice, maple syrup, toasted pecans and greek yogurt stirred together with chia seeds then topped with a white chocolate shell that is so fun and delicious. A healthy, high protein sweet treat for Fall!

INGREDIENTS – makes 3

1/2c pumpkin puree
1/3c milk
1/2c greek yogurt
3T maple syrup
1/4t vanilla
3/4t cinnamon
1/4t ground ginger
1/4t nutmeg
1/8t allspice
1/8t clove
Pinch salt
1/4c pecans, toasted and chopped
1/4c chia seeds

1/3c white chocolate chips (or regular chips)
1/2t coconut oil

INSTRUCTIONS

Whisk together pumpkin, milk, yogurt, maple, vanilla cinnamon, ginger, nutmeg, allspice, clove and salt until smooth. Add the chia seeds and stir them in. Pour the mixture into three 1c containers, cover with a lid, and refrigerate for at least 4 hours-overnight. You can just enjoy the chia puddings as is or add the chocolate shell with the instructions below.

Melt white chocolate chips and coconut oil in the microwave or a double boiler then distribute over the pudding. Gently spread the chocolate out, making sure it touches the dish all the way around. (This helps when you go to break it with a spoon, if it doesn’t stick to the sides it will just squish the pudding out around the sides… messy experience.) Place the lids back on and put them back in the fridge until the chocolate has hardened, at least an hour.
