MAPLE ROSEMARY PEANUT BRITTLE

Peanuts roasted in a rosemary-infused maple butter with a touch of sea salt. As it cooks the maple butter turns into a rich and flavorful caramel that when cool becomes a crisp brittle that is so flavorful and deliciously perfect for Fall! You’re gonna love it!

INGREDIENTS

3T butter
1T fresh rosemary, finely chopped
1/3c maple syrup
2c peanuts, roasted + unsalted
1t flakey sea salt (if you’re using salted peanuts, skip this)

INSTRUCTIONS

Preheat oven to 325°F.

Bring a med-large skillet to medium heat. Melt the butter completely then add rosemary, swirl it around a bit, letting it bubble a little. Pour in maple and stir until it’s mixed in. Allow the maple butter to come to a simmer for 1 minute then pour in the peanuts and stir to coat. Bring to a simmer, stir in sea salt and let simmer for 3 minutes.

Pour onto a parchment lined baking sheet, spread it out then bake for 15-20 minutes, until the edges start to brown a little. Remove from the oven and allow to cool completely before breaking it into pieces.
