Tart, chewy dried cherries and crunchy, toasted walnuts over a crisp bed of romaine and cucumber slices, finished with a creamy, super flavorful gorgonzola-thyme vinaigrette. A delicious side salad for Fall!
INGREDIENTS – serves 2-4
2oz gorgonzola, (the good stuff from the wedge is best)
1t fresh thyme
2T white balsamic vinegar (regular balsamic works too)
1t honey
3T olive oil
4-6c romaine, chopped
1/3c cucumber, sliced/chopped
1/3c dried cherries
1/3c walnuts, toasted and chopped
INSTRUCTIONS
In a small food processor, blend gorgonzola, thyme, white balsamic, honey and olive oil with a pinch of salt and pepper until smooth.
Add romaine to a serving dish, top with cucumber, dried cherries and walnuts then drizzle with gorgonzola vinaigrette.
