PUMPKIN PECAN WAFFLES

Fluffy, crisp, spiced pumpkin waffles with bits of toasted pecans. Sweet, cozy and so delicious. Perfect for fall!

INGREDIENTS – makes about 5 large round waffles

1c flour
4t baking powder
1/4t salt
1t cinnamon
1/2t ginger
1/2t nutmeg
1/4t clove
1/4t allspice
1/2c pumpkin puree
2 eggs
1/4c maple syrup
1t vanilla
1/3c pecans, toasted and chopped fairly fine – optional
1/4c melted butter (browned is even better)

INSTRUCTIONS

Sift flour, baking powder, salt and spices in a large bowl. Stir in the pumpkin puree, eggs, maple, vanilla and pecans then pour in the butter and whisk until smooth. Scoop onto a well greased waffle maker, close the lid and let cook for 7-8 minutes (longer than plain waffles, if its too difficult to take out, cook a little longer). To crisp up a bit more toss in the toaster oven (or a 325°F oven) for a few minutes before serving. This is also how I keep them warm before serving.
