MEATBALLS + GNOCCHI

Tender, juicy meatballs baked in tomato sauce with gnocchi and fresh mozzarella. Super easy to make and so cheesy delicious. A new weeknight favorite!

INGREDIENTS – serves 3-4

1/2lb ground chicken/turkey (or any ground meat)
1 egg
1/4t salt
1/4t black pepper
1/4t garlic powder
1/4t onion powder
1/4t thyme
1/4t basil
1/4t oregano
1/8t red pepper flakes – optional
1/2c bread crumbs
1/4c parmesan, grated – plus more for topping

1 pkg gnocchi
2c tomato sauce (marinara, etc, whatever you like)
8 oz fresh mozzarella, balls or cubes

2T pesto

INSTRUCTIONS

Preheat oven to 375°F.

Lightly mix ground meat, egg, salt, garlic powder, onion powder, thyme, basil, oregano, red pepper flakes, bread crumbs and parmesan. Drizzle a little olive oil (or nonstick spray) on the bottom of an 9×13 dish (or equivalent). Scoop the meat mixture into about 16-20 balls (I use a small cookie scoop). Place the meatballs in the dish then bake for 15 minutes.

Dump the gnocchi in, pour sauce over then gently stir to coat. Spread it all out in the baking dish then distribute mozzarella over the top. Bake again for 30 minutes.

Dollop the pesto over the top then give it a little stir then serve.
