Probably the most delicious way you’ll ever use zucchini. Fluffy, silky mini muffins sweetened with maple syrup and loaded with shredded zucchini and chocolate chips. So so freaking good!
INGREDIENTS – makes about 30
2c all purpose flour
2 1/2t baking powder
1/4t salt
1/4t cinnamon
2 dashes nutmeg
1 1/2c zucchini, shredded
1/2c milk
2 eggs
1/2c maple syrup
1/2t vanilla extract
1/4c butter, melted and browned
1/2c+ chocolate chips (measure with your heart)
INSTRUCTION
Preheat oven to 425°F. In a large bowl, sift together flour, baking powder, salt, cinnamon and nutmeg. Pour in zucchini, milk, eggs, maple, and vanilla. Stir to combine then fold in the chocolate chips and stir in the butter. Scoop into a greased mini muffin pan (about 3/4 fill), place in the oven, reduce the temperature to 375°F and bake for about 18 minutes, until a toothpick comes out clean.
