CHEESY GREEN CHILI CORN MUFFINS

A classic fluffy, slightly sweet corn muffin with pieces of green chilis and melty cheddar cheese. Perfect slathered with just a touch of butter. A quick, delicious and super flavorful side to any meal.

INGREDIENTS – makes 24

1c flour (just about any kind will work)
1c cornmeal
4t baking powder
3/4t salt
1c cheddar cheese, shredded (pepper jack, monterey jack, gouda would work great too)
1-6oz can green chilis
1 egg
1/4c maple syrup
3/4c milk of choice or buttermilk
1/4c butter, melted or oil

INSTRUCTIONS

Preheat oven to 425°F. In a large bowl, mix flour, cornmeal, baking powder and salt. Add cheese, toss to coat in the flour mixture. Pour in green chilis, egg, maple syrup, milk and butter, stir to combine. Scoop into a well greased mini muffin pan (makes 24). Bake for 15-18 minutes.
