ROASTED CHERRY TOMATO SAUCE with PROSCIUTTO + GARLIC

Cherry tomatoes, fresh thyme and garlic with slices of prosciutto nestled in, roasted until the tomatoes burst and the prosciutto crisps just enough. So darn flavorful and delicious. A perfect way to celebrate some gorgeous tomatoes this season!

INGREDIENTS – serves 2

2c cherry tomatoes
3 garlic cloves
3-4 thyme sprigs
1/4t salt
2-3T olive oil
4-5 slices prosciutto

INSTRUCTIONS

Preheat the oven to 425°F.

Pour tomatoes in a 8×8 or 9×9 pan with garlic and thyme. Sprinkle with salt then drizzle with olive oil, stir to coat. Bundle the prosciutto slices up a bit and nestle them in with the tomatoes. Roast for 18-20 minutes.

Serve over your favorite pasta or risotto.
