One of the easiest, most delicious dinners! Gnocchi, tomatoes and fresh greens stirred together with ricotta, mozzarella and parmesan then dumped into a baking dish with some white wine and baked until the tomatoes are roasted perfectly and the cheese is gooey.
INGREDIENTS – serves 3-4
1 pkg gnocchi
2c greens, shredded (Swiss chard, kale, spinach, etc)
2c cherry tomatoes, halved
8 oz ricotta
8 oz mozzarella pearls (or cubed mozzarella)
1/2c parmesan, grated (separated 1/4c/1/4c)
1/2t salt
1/2t garlic powder
1/2t thyme
1/4t oregano
1/4t black pepper
Pinch red pepper flakes
1/2c white wine
INSTRUCTIONS
Preheat the oven to 425°F.
In a large bowl, stir together gnocchi, greens, tomatoes, ricotta, mozzarella, 1/4c parmesan, salt, garlic powder, thyme, oregano, black pepper and red pepper flakes, until everything is nice and combined. Dump it into a greased 9×9 pan smooshing down to even it out. Pour wine over then sprinkle with the remaining 1/4c parmesan. Cover with a lid or foil and bake for 30 minutes. Remove the lid then bake for another 10-15, until golden and perfect.
