Fresh tomatoes and herbs with melty havarti cheese on a flakey, crisp pastry. Baked quick and easy, upside-down on a sheet pan. An herby, cheesy tomato twist on the viral upside-down tart trend. So delicious, easy and fun to make!
INGREDIENTS – makes 4
1c cherry tomatoes, halved or 1 small-med tomato, sliced
1/4t salt
1/4t black pepper
1-2 sprigs fresh thyme, removed from stems
1T fresh chives, chopped
4oz havarti cheese, sliced
1 sheet puff pastry, defrosted and cut into 4 even rectangles
1 egg, whisked
INSTRUCTIONS
Preheat the oven to 425°F.
Sprinkle tomatoes with salt and pepper then place cut side down a towel for about 5 minutes to drain out some of the liquid.
Assemble the tomatoes into roughly 4, 3″x3″ squares on a large parchment lined sheet pan. Make sure the 4 squares are evenly spread out on the pan. Sprinkle about half the herbs over the tomatoes then top with havarti then place a piece of puff pastry over the whole thing. Gently press the edges of the pastry around the sides and into the parchment all the way around each. Brush each with whisked egg then bake for about 10 minutes.
