Peaches roasted on top of spiced, brown sugary, buttery, chopped pecans until caramely then flipped over on top of whipped ricotta. Holy moly these are so good! Such a delicious balance.
INGREDIENTS – serves 2-4
2 peaches, halved and pitted
3T butter
1/2c pecans, chopped
1/4c brown sugar
1/8t cinnamon
Dash nutmeg
Dash allspice
Dash cayenne
1/8t vanilla
8oz ricotta, whipped (in a food processor)
INSTRUCTIONS
Preheat oven to 425ºF.
Melt butter in an oven save skillet. Turn off the heat then stir in pecans, brown sugar, cinnamon, nutmeg, allspice, cayenne and vanilla. Scoot the pecans around to make 4 little circles as good as you can then press the inside of each peach half into each of the pecan circles. Baked for 20 minutes. Serve over whipped ricotta.
