Nothing helps beat this summer heat like this super fresh and hydrating salad! Juicy cantaloupe and crisp cucumber tossed with a squeeze of lemon, flakey sea salt and a drizzle of hot honey then finished with a touch of mint. So dang delicious and flavorful!
INGREDIENTS – serves 2-4
1/4 cantelope, 1/2″ cubed
1 cucumber, 1/2″ cubed
1/2 lemon, juiced
3-4T hot honey (buy it or recipe below)
Flakey sea salt
1T fresh mint, chopped/torn
INSTRUCTIONS
Pour cantelope and cucumber in a large bowl. Squeeze the lemon half over, drizzle in about half of the hot honey. Give it a good stir. Finish with a little more sea salt (to taste), hot honey and the mint.

HOT HONEY – makes about 1/4c
1/4c honey
1/4t red pepper flakes
INSTRUCTIONS
Add both ingredients to a small pot and bring to a boil. Keep an eye on it so you don’t burn it, it goes quick. Swirl around to make sure the pepper flakes are well incorporated.
